Isolation of microorganisms, able to produce peptide amidase (I), comprises culturing a sample with microorganisms on a first medium contg. amide as N source plus sources of C and inorganic salts. The colonies that develop are transferred to a medium contg. N-acetyl-D,L-Met amide (II) and those microorganisms able to grow on both media are selected. Also new are (1) Xanthomonas maltophilia DSM 9181 and (2) (I), produced by the selected microorganisms, able to cleave selectively free amino acids from the C terminus of peptide amides.
