New derivs. of serine are of the formula R-O-C(O)-NH-(CH2OH)CH-C(O)-O-R' (I), and/or their D or L optical isomers. R, R' = 8-30C hydrocarbon gps. 12 cpds. are specifically claimed, e.g. dodecyl-3-hydroxy-2-(N-hexadecyloxy-carbonyl) aminopropionate.
