摘要 |
PURPOSE:To disperse a sucrose fatty acid ester in a slightly acidic drink without forming a precipitate and to improve the shelf stability of the drink. CONSTITUTION:Sucrose fatty acid ester having >=50wt.% monoester content as ester of a 10-24C fatty acid with sucrose is dispersed in an aq. soln. of pH 3.5-6 with a polyglycerol fatty acid ester compsn. consisting of a polyglycerol fatty acid ester having 15-30% rate of introduction of fatty acid as ester of polyglycerol with a 1024C fatty acid and free polyglycerol. |
