PURPOSE:To obtain an agent for improving a meat piece having a certain size to give a meat with soft and juicy texture, agreeable to eat, having excellent taste and flavor and servable by a simple cooking. CONSTITUTION:This modifying agent is produced by dissolving or dispersing at least one kind of substance selected from sorbitan fatty acid esters, esters of polyglycerols and fatty acids (or condensed ricinoleic acid), sucrose fatty acid esters having an HLB of <10 and lecithins in water or an aqueous liquid or by dissolving or dispersing at least one kind of substance selected from sorbitan fatty acid esters, esters of polyglycerols and fatty acids (or condensed ricinoleic acid), sucrose fatty acid esters and lecithins containing >=25wt.% of phosphatidylinositol in oil and fat or by dissolving or dispersing at least one kind of substance selected from sorbitan fatty acid esters, esters of polyglycerols and fatty acids (or condensed ricinoleic acid), sucrose fatty acid esters and lecithins in an emulsified material. |
