PURPOSE:To prepare a high-quality MISO (fermented bean paste) sufficiently harmonized with added salt and having balanced taste and flavor by using a raw material incorporated with trehalose. CONSTITUTION:A MISO is brewed by using a raw material incorporated with preferably 3-7wt.% of trehalose based on the total raw material. The trehalose to be added to the raw material is powder or fine crystal of trehalose dihydrate. Preferably, the trehalose is uniformly mixed with the total raw materials prior to the start of brewing. |
