发明名称 RICE-BOILING METHOD
摘要 PURPOSE:To give boiled rice of good taste by soaking the rice in acidic water prepared by electrolysis of tap water, then boiling the soaked rice with the alkaline water. CONSTITUTION:Rice is soaked in acidic water, preferably of pH 2.2-4 which is formed by electrolysis of tap water or salt-added tap water, preferably for at least 90 minutes until the water content attains 2.7wt.% based on the raw rice. Then, the soaked rice is boiled in alkaline water, preferably of pH 7.5-9.5 given by the electrolysis.
