PURPOSE:To produce boiled indica type rice having an excellent taste similar to that of boiled japonica type rice by boiling indica type rice (blended rice) in the presence of beta-amylase. CONSTITUTION:Indica type rice or blended rice containing it is boiled in the presence of beta-amylase (preferably, derived from a plant such as soybean, barley or wheat). The amount of added beta-amylase is preferably 0.01 to 5wt.% based on 100 pts.wt. indica type rice. |
