PURPOSE:To prepare a KONJAK (paste made from the starch of devil's tongue) showing decreased shrinkage in storage and cooking and enabling quick impregnation of seasonings compared with conventional KONJAK. CONSTITUTION:The anti-shrink agent to be used in this KONJAK contains an edible material composed of a structure material containing cellulose regenerated from an aqueous solution of an alkali metal hydroxide and a guest component consisting of a polypeptide and/or an edible polysaccharide. The part containing the polypeptide as the guest component contains the cellulose as a sea component surrounding the polypeptide island and the part containing the edible polysaccharide as the guest component contains the cellulose forming a homogeneous continuous phase together with the edible polysaccharide. The sea component or the continuous phase accounts for at least 10% of the structure material. This KONJAK is composed essentially of the edible material consisting of the anti-shrink agent for KONJAK, a KONJAK raw material, a coagulant and water and the amount of the edible material, is 0.1-4 pts.wt. in terms of solid component based on 1 pt.wt. of the solid component of the KONJAK raw material. |
