PURPOSE:To obtain the titled food colorant, consisting of a dried and colored protein prepared by dyeing a water-insoluble protein with a water-soluble dye and having excellent food compatibility as well as preventing properties for blurring. CONSTITUTION:A colorant for food obtained by adding and bringing 0.2-10pts. wt. water-insoluble protein, e.g. casein, into contact with 1pt.wt. natural and/or synthetic water-soluble coloring matter, e.g. cacao pigment, and bringing the resultant blend in the presence of water or a water-miscible alcohol, e.g. ethanol, containing 50-80% water in an amount of 0.5-10 times based on the water- insoluble protein at a temperature of room temperature-<=boiling point of the solvent for 30min-1hr, separating solid from liquid to provide a colored protein and, if necessary, washing the resultant colored protein with water or an alcohol, drying and pulverizing the washed and colored protein. |
