PURPOSE:To produce an ultrafine gelatinized cereal and rice giving a low-caloric food having excellent taste, flavor and palatability by processing a raw cereal having a specific average particle size to remove the fibrous part, gelatinizing the processed cereal, preliminarily crushing with a high-speed rotary crusher, etc., and pulverizing to ultrafine powder with a jet-pulverizer, etc. CONSTITUTION:This gelatinized cereal and gelatinized rice giving a low-calorie food, low-fat food, nutrient-enriched food, etc., is prepared without deteriorating the palatability, taste and flavor of the food by washing raw cereal having an average particle size of 2 3 ram with water after removing foreign materials, adjusting the water- content of the cereal to 12-18%, removing the skin with a rice polisher or a barley polisher to remove the fibrous part, adding 3-15% of water based on the skinned cereal with a water-adding machine, drying with heat or roasting the cereal to gelatinize the starch, preliminarily crushing the gelatinized cereal with a high-speed rotary crusher or a cutting and shearing mill until the ratio of the fraction having particle size of <=80mum becomes >=90% in terms of the particle number and pulverizing the powder to ultrafine powder with a jet-pulverizer or a shearing mill until the ratio of the fraction having particle size of 5-50mum becomes >=95% in terms of the particle number. |
