PURPOSE:To provide a method for the boiling of beans by actively floating and agitating beans in the thermal convection generated in the pot taking advantage of the blowing force of live steam blown into the pot, thereby increasing the heat transfer coefficient of the bean surface and shortening the boiling time and to provide an apparatus for the boiling of beans. CONSTITUTION:A cylindrical straightening plate 3 is placed at the center of a pot bottom, live steam is blown from a steam-blowing pipe 8 opened under the inside of the straightening cylinder into the pot to generate thermal convection flow in the pot and the beans are floated and circulated with the thermal convection flow to quickly improve the heat transfer coefficient of the bean surface and promote the boiling of the beans. After the main boiling process, the blowing of live steam from the steam blowing pipe is stopped, the live steam is supplied to a steam-heating pipe 12 placed at the upper part in the pot and the hot water drained from the steam-heating pipe is supplied from the steam blowing pipe at the pot bottom to the pot to generate a weak thermal convection and allow the beans to be floated and circulated in the weak thermal convection. |
