PURPOSE:To obtain a bottled salmon backbone, capable of assuming a light elegant taste without any fishy smell and excellent in preservation stability by cutting the salmon backbone, washing the cut pieces of the backbone, steaming the washed pieces of the backbone in a steamer, discarding a broth, bottling the steamed pieces of the backbone, injecting a seasoning liquid thereinto, closing a cap, replacing the bottled pieces of the backbone in the steamer and thermally sterilizing the bottled pieces of the backbone. CONSTITUTION:This method for producing a bottled salmon backbone 2 is to cut a salmon backbone 2, wash the cut pieces of the backbone, drain the water from the washed pieces of the backbone, place the resultant pieces of the backbone in a steamer, steam the pieces of the backbone, soften the pieces of the backbone 2, mostly discard a broth, cool the pieces of the backbone 2, fill the cooled pieces of the backbone in a bottle 1, inject a seasoning liquid 3 thereinto, close a cap, replace the bottled pieces of the backbone in the steamer, thermally sterilize the bottled pieces of the backbone and regularly close the cap. |
