PURPOSE:To manufacture a granular vegetable tea dryable in a short time without deteriorating the taste, flavor and nutrient of the vegetable and exhibiting excellent disintegrability of the granule, solubility of water-soluble dietary fiber and extraction of the vegetable component with water or hot water in drinking by dissolution, elution or decoction. CONSTITUTION:This process for the manufacture of a granular vegetable tea contains a step for mixing a powdery vegetable with a water-soluble dietary fiber having a viscosity of <=50cps as 10% aqueous solution, a step for granulating the obtained mixture together with water and a step for drying the granule. The amount of the water-soluble dietary fiber having a viscosity of <=50cps as a 10% aqueous solution in the mixing step is 0.3-5 pts. based on 1 pt. of the vegetable powder and the amount of water to be added in the granulation step is 5-30wt.% based on the total solid component in the mixture. The above components may be incorporated, in the mixing step and/or the granulation step, with at least one kind of assistant raw materials selected from excipient, binder, disintegrant, absorbefacient, lubricant, seasoning, sweetener, acidulant, vitamin, mineral, perfume and colorant. |
