<p>The present invention relates to an instant mother dough in solid form. A method of preparing such a mother dough is disclosed comprising: (a) preparing a mixture of ingredients comprising the functional ingredients of a fermentation mother dough and including a binding component selected from water, edible oils, fats, fat-related compounds, gel-forming agents and combinations thereof, and (b) cooling and/or compacting said mixture to obtain said solid form.</p> |
