METHOD FOR DECONTAMINATION OF SHEEP-MILK WHITE CHEESE IN BRINE (FETA TYPE), CONTAINING LEAD AND/OR CADMIUM QUANTITIES ABOVE THE STANDARDS

The method can be applied in the manufacture of white cheese in brine produced from sheep milk containing lead and/or cadmium quantities above the standards, produced in areas having metallurgical or ore mining industries. It reduces the quantity of lead by 50 to 72% and by 70 to 76% for cadmium. By the method, 0.15-0.5% ascorbic acid is added to the brine in which the cheese is maturing for 45 days at temperature of 15°C and at daily shaking of the vessel.
