The device applied for the gas range oven or gas burner, has a gas valve of a simplified structure and multiple functions of controlling the flame for multi-stages, extinguishing and locking the ignition. The device comprises a valve body(10) having an inlet(11), an outlet(12), a plurality of passages(13-16); a main plunger(20) and an adjust plunger(30) for adjusting the opening/closing of the respective passages; a cam mechanism(50) and a spring(52) for moving the adjust plunger back and forth by rotating; a select cam(70) connecting with the main plunger; a cam guide groove(57) cooperating with the select pin(82) for controlling a manipulation knob(80).
