The pork ribs seasoning sauce is prepared by 1) mixing 10L water and 2L soy sauce, 2) putting 600g ginger paste in the gauze bag, soaking in the mixed soln. and boiling for 1 hr., 3) adding 1.8 kg sugar to the boiled soln. and re-boiling for 1 hr. to obtain 8L soln., 4) mixing 250g potato starch , boiling and cooling, 5) adding onion extract, welsh onion extract, garlic extract, pepper powder, condiment etc. into the cooled soln. and mixing to obtain 8.5L seasoning sauce. The pork ribs are soaked in the seasoning sauce to stand at -1˜12 deg. C for 24 hrs.. |
