In preparing bakery goods such as bread, rolls, sweet rolls, coffee cakes and cinnamon rolls without yeast leavening, the culinary mix baked comprises flour which has not less than 18% protein content, shortening, 2.5-7.5%, of the total mix, of glucono-delta-lactone and an amount of carbon dioxide-producing chemical such as sodium bicarbonate in the ratio 1.5-0.5 of the glucono-delta-lactone or of the gluconodelta-lactone plus any fast-acting acid leavening agent such as monocalcium phosphate, monopotassium phospate and sodium acid sulphate, or potassium acid tartrate present. |
