PURPOSE:To obtain the subject soft product rich in flavor and tastiness even from a raw scleritic squid by roasting a raw material squid split and washed on a direct fire or a heated iron plate and then carrying out the treatment such as seasoning, drying or aging. CONSTITUTION:This method for producing a seasoned and processed product of a raw squid comprises spliting and washing a raw squid, then carrying outing the roasting treatment on a heated iron plate or a direction fire in a short time, thinly softening the hard epidermal part, cooling the resultant treated squid, seasoning and aging the cooled squid, providing a semifinished product, secondarily roasting the resultant product, tearing the roasted squid, are secondarily seasoning the torn squid to afford the final product. |
