PURPOSE:To improve freezing storage property, especially resistance to denaturation due to freezing after boiling fresh fishes and shellfishes. CONSTITUTION:A fresh marine product is boiled in a dilute common salt in the presence of at least aliphatic carboxylic acid slats. As the aliphatic carboxylic acid salts, one or more kinds of compounds selected from the group consisting of sodium acetate, DL-sodium malate, L or DL-sodium tartate, sodium lactate, monosodium succinate and trisodium citrate can be used. As these aliphatic carboxylic acid salts, one kind selected from monofunctional, difunctional and trifunctional carboxylic acid sodium salts or amino acids or their salts and saccharide is preferably combinedly used. |
