摘要 <p>PURPOSE:To provide a method for producing a modified alcohol-based seasoning free from a stimulating smell and having substantially the same component composition as that of a raw material alcohol-based seasoning and produce a high-quality food by using it. CONSTITUTION:A method for producing a modified alcohol-based seasoning by bringing a raw material alcohol-based seasoning of 40 to 100 deg.C into contact with a reduced-pressure gas phase of <=7mmHg without heating it and removing the evaporated materials and a food produced by using the modified alcohol- based seasoning are provided.</p>
