PURPOSE:To achieve the stability of emulsifying force even in a low-pH region or in the presence of ions, whereby the heat stability and freeze-stability of emulsified products is excellent, by using lecithin and cycloextrin represented by a specific general formula as composing components. CONSTITUTION:Emulsifying agents are provides by using, as composing components, lecithin and cyclodextrin represented by the formula I (wherein, although both formulas II and III can have acyl groups of fatty acids and both of which may be identical or different, at least one of them has a ratio of saturated fatty acids in composing fatty acids of 50% or more). Emulsified products prepared by the use of said agents exhibit an excellent heat stability and freeze stability as well and, further, the emulsifying force of said agents is stable in a low-pH region, moreover, even in the presence of ions of calcium, etc. |
