PURPOSE:To obtain the subject coating material providing coating having crispy, light and pleasant texture in frying a material with an oil to give a fried material such as TEMPURA (Japanese deep-fat fried food) by adding a specific amount of trehalose to powder for TEMPURA. CONSTITUTION:This coating material for a fried food is obtained by adding 0.1-10.0wt.%, preferably 0.5-7.0wt.% to a coating material for a fried food such as powder for TEMPURA. The coating material has neither addition of sweetness nor burning-like coloring and provides coating for TEMPURA, having light, crispy and tasty texture. |
