PURPOSE: To provide a method for thermally varying and treating the aqueous colloidal dispersion liquid of dairy whey protein to apply visual and attractive feeling approximate with oil in water emulsion. CONSTITUTION: Concerning the method for thermally varying and treating the aqueous colloidal dispersion liquid of varied dairy whey protein, this dispersion liquid is composed of macro collides practically composed of non-coagulated grains. All the binding lumps of these grains are composed of grains having about 5×10 μ<3> to 5.5 μ<3> volume. In the case of about 800-fold observation under a standard optical microscope, these grains are partically in the shape of long spheries. In the case of hydration, these grains have practically smooth emulsion- like attractive characteristics. |
