摘要 |
PURPOSE:To obtain a high-quality fishery paste product by using a substantial amount of sake-lees having ineffective application. CONSTITUTION:0-150 pts.wt. of water is added to 100 pts.wt. of sake-lees followed by kneading and crushing into pasty sake-lees of pH 6.0-8.0, which is then treated under heating at 65-110 deg.C for 5-60min into pasty heat-treated sake-lees. Then, 100 pts.wt. of ground fish meat is incorporated with 5-100 pts.wt. of the pasty heat-treated sake-lees followed by kneading and then conducting a treatment under heating. |
