A health food contg. eicosapentaenoic acid (EPA) is prepd. by i) extracting ginseng with ethanol and concentrating to obtain the ginseng extract, ii) mixing 5-30 wt parts ginseng extract with 10-75 wt.% Pur EPA extracted from a sardine, 0.5-10 wt parts natural tocopherol, 0.5-10 wt parts ascorbic acid and 10-70 wt parts shortening oil, iii) emulsifying the obtd. mixt. at 40 deg.C or less by homogenizing, and iv) filling gelatin capsule with the obtd. emulsifyed mixt.. The obtd. health food is useful for the prevention of adult disease.
