PURPOSE:To obtain a dessert food of sliced arrowroot-starch cake fashion, comprising fine linear gel containing specific components and a syrup, integrally takable these two components, and having excellent palate feeling and favorable touch feel to the throat when swallowed. CONSTITUTION:This dessert food comprises (A) fine linear gel containing (1) pref. 0.35-0.7wt.% of locust bean gum, (2) pref. 0.15-0.3wt.% of xanthan gum, (3) pref. 0.2-0.35wt.% of gelan gum and (4) pref. 0.03-0.07wt.% of glucomannan and (B) a syrup (pref. 30-70cp in the viscosity at 25 deg.C) at the weight ratio A/B of pref. (1:0.7) to (1:1.9). It is preferable that the component (1) to (4) be used so as to be a total of their concentrations of 0.7-1.2wt.% in the component A and the breaking force of the component A be regulated so as to be 35-65g. |
