Sausage meat is inserted into a tube of edible animal gut, one end of which is knotted. The other open end is drawn together and closed to form the sausage. The closure is effected by heat sealing the sausage skin. Appts. for carrying out the process is also claimed comprising a die (1) whose welding element (5) incorporates a V-shaped depression (3) and slit (4) at the lowest point. A heated die (2) reaches into a depression within the welding element, which when compressed creates a slot (14) of predetermined shape and size.
