PURPOSE:To obtain quick-tookable rite, capable of remarkably shortening the dipping time and excellent in instantaneous properties and appearance, taste and texture in reconstitution by washing rice grains with water, then steaming the washed rice grains under specific conditions and drying the resultant rice grains. CONSTITUTION:This method for the objective producing quick-cookable rice is to wash rice grains with water, then primarily steam the washed rice grains, dip the primarily steamed rice grains in warm water, further secondarily steam the rice grains and dry the resultant rice grains. Furthermore, the quick-cookable rice is preferably produced by using an apparatus 1 for producing the quick- cookable rice composed of a device 2 for washing rice grains with water, a device 3 for primary steaming capable of pregelatinizing the washed rice grains, a device 4 for dipping the pregelatinized rice grains in the warm water, a device 8 for secondary steaming capable of pregelatinizing the dipped rice grains again and a dryer 10 for drying the pregelatinized rice grains. |
