Agents for solubilising biomolecules, particularly proteins, are disclosed. The agents consist of zwitterions having formula (I) or (II), wherein X is N or P; B is a hydrocarbon chain having 1-6 carbon atoms; R<1>, R<2> and R<3> are hydrocarbon groups, where R<1> and R<2>, taken together with X, may form a heterocyclic ring; R, taken together with X, is an unsaturated heterocyclic ring; and Y is SO3<->, OSO3<-> or COO<->. Said agents are useful in methods for purifying, solubilising or assaying proteins, especially by electrophoresis or chromatography.
