A method and apparatus are disclosed for efficiently cutting food items, such as potatoes, into helical strips. The food items are provided seriatim to a cutter head assembly (12) from a conveyor system (14). Food items on the conveyor system (14) are aligned longitudinally, impaled on small spikes (48) protruding from the conveyor (36), and then gripped and advanced toward the cutter head assembly (12) by upper and lower feed rollers (150-152). The cutter head assembly (12) includes a helically shaped cutting member (190) defining at a leading edge thereof a slicing blade (182) and supporting on its front surface (200) a plurality of perpendicularly extending scoring blades (180). In one embodiment, the helical cutting member (190) is mounted at its periphery by being threadedly received in a helical thread cut in an annular holder (192). In a second embodiment, the cutter head assembly (12) includes a cylindrical sleeve or tube (198) having an open discharge end and an opposed cutting end (212) to which the helical cutting member (190) is attached.
