摘要 This invention relates to a process for controlling the immersion dehydration/impregnation of a food product with at least one step comprising immersion into a solution. The invention is characterized in that: the weight of the amount of the food product is at least indirectly determined prior to its immersion in said solution; the amount of the food product is immersed in the volume of solution and the weight R of the immersed food product is at least indirectly determined and designated as resultant R; the evolution in time of said resultant R of the immersed food product is monitored; and the amount of solute in said food product is determined from an equation such as: Ps=(R-R DEG )+Ps DEG -(Pw-Pw DEG )*(1-RO*A).
