PURPOSE:To obtain a DNA coding a polypeptide having a specific amino acid sequence as a partial amino acid sequence and capable of forming cyclodextrin from soluble starch. CONSTITUTION:This DNA exhibits cyclomaltodextrin glucanotransferase activity, contains one or more amino acid sequences of formula I to formula V as partial amino acid sequences and codes a polypeptide having a molecular weight of70,000+ or -+10,000 by SDS-polyacrylamide gel electrophoresis. The donor microorganism is preferably Bacillus macerans or Bacillus stearothermophilus and preferably a recombinant DNA is produced from the DNA and an autonomously proliferating vector.
