A dish of pureed potatoes is made using the following ingredients: 6kg of peeled potatoes, 220g of salt, 240g of peeled garlic, 960g of cream and 700g olive oil. The potatoes are boiled in about 5 litres of water for 15-30 mins. with the salt and garlic, after which they are drained and mashed. The mashed potatoes and garlic are beaten slowly for 5 mins.. The cream is heated to boiling point, then allowed to cool to about 70 deg C, and added to the potatoes and beaten slowly for 5 mins., then quickly for 30 mins.. The mixture is beaten slowly for a further 5 mins. after addition of the olive oil (at ambient temperature), then quickly for about 40 mins.. |
