FILM INHIBITOR AGAINST FILM YEAST

PURPOSE:To obtain a food preservative capable of selectively preventing occurrence of a film yeast in a fermented food or a processed food having low water activity and improving preservability of a food without impairing qualities of the food. CONSTITUTION:This food preservative comprises a glyceroglycolipid (preferably monogalactosyldiacyl glyceride or digalactosyldiacyl glyceride) as an active ingredient and is capable of preventing formation of a film by a film yeast. A glyceroglycolipid is readily obtained from an extract of Desmodium caudatum with an organic solvent.
