PURPOSE:To provide a method for changing the string-shaped part of scallops which was uselessly abandoned as an industrial waste until now to a processed food easier to eat by a relatively ready treatment process and giving a new added value thereto. CONSTITUTION:Washed string-shaped parts of scallops are boiled for a short time and allowed to pass through an edible oil bath heated to 150 to 18 deg.C so as to be dehydrated. According to such a processing method, odor peculiar to the string-shaped part of shells is reduced since dehydration is carried out in a high-temperature edible oil after a boiling treatment. The tissue of the string-shaped part of shells is changed to a brittle structure similar to honeycomb structure and a food having a light mouth feeling can be obtained. Increase of the demand can, therefore, be expected. |
