PURPOSE:To prepare dried MISO (fermented bean paste) keeping the taste and dissolution performance of raw MISO by drying a raw MISO under specific condition. CONSTITUTION:Granular dried MISO is prepared by drying a raw MISO at a vacuum degree of 5-40 Torr (preferably 10-30 Torr) and a MISO temperature of 10-45 deg.C (preferably 10-40 deg.C) while applying shearing force to loosen the raw MISO. This preparation process causes little deterioration of the quality of the MISO because raw MISO can be dried at a low temperature in a short time. |
