PURPOSE:To obtain a method for the cooking of aseptic rice in a container, effective for preventing the secondary contamination caused by the contact of cooked rice with air and a machine and reducing the cost of the container. CONSTITUTION:Washed rice subjected to aseptic treatment and water for rice cooking are fed into a primary container continuously formed by a deep-drawing container-forming machine and having a thickness of about 150mum, sealed with a film having several number of steam-ejection holes and successively transferred to a rice cooking machine and a steaming machine to effect the cooking of the rice. After finishing the rice cooking, the primary container is successively transferred to an aseptic clean room and put as it is in a secondary container formed with an oxygen-barrier material using a deep-drawing container forming machine. The container has a thickness of about 150mum and a size to hold the primary container. The secondary container is evacuated, filled with an inert gas, sealed and cooled to obtain the packaged rice. |
