PURPOSE:To obtain the food developing no palate feel hardening or strain even after heated in a microwave oven and impairing its flavor, by incorporating a bakery food with a moist heat treated product of starch. CONSTITUTION:A frozen bakery food is incorporated with pref. 2-20wt.%, based on the whole grain powder, of a moist heat treated product of starch. The moist heat treatment of starch is carried out using saturated steam to obtain the treated product having robust structure and retaining the granular structure of the starch. |
