L-Glytamic acid is produced by aerobically culturing micro-organisms capable of producing L-glutamic acid in a culture medium having acetate ions as the main carbon source and also containing in each decilitre of the culture medium, during at least the growth of the microorganisms, from 0À005-2 g. of a sulphur-containing compound selected from a sulphurcontaining acid, amino acid or alcohol, or a derivative of any one thereof, or thiourea; and acetic acid and/or a salt thereof is fed to the medium, the acetate ion concentration in the medium during the growth phase being sufficiently low so as not to inhibit the growth of the micro-organism. The S-containing acid or amino acid may be cystine, cysteine, homocystine, homocysteine, methionine or thioglycollic acid and the alcohol may be #-mercaptoethanol preferably used in an amount of 0À05- 0-5 g/decilitre. An alkali-metal salt of acetic acid is preferably used as a main carbon source and the medium may also contain a dicarboxylic acid having 4 C atoms. Suitable microorganisms belong to the genera Micrococcus, Corynlbacterium, Brevibacterium and Arthrobacter.
