PURPOSE:To efficiently obtain candies having excellent light resistance, heat resistance and clarity by pulverizing an oilsoluble carotenoid-based coloring matter, dispersing the coloring matter into an aqueous raw material to give a red coloring matter, coloring a frozen food red with the red coloring matter. CONSTITUTION:An oil-soluble carotenoid-based coloring matter such as beta-carotene is pulverized and dispersed into an aqueous raw material, preferably one mixed with one or more of an emulsifying agent, e.g. sucrose fatty acid ester, a thickening stabilizer, e.g. gum arabic and a food material having stabilizing effect on emulsification, e.g. casein or is dispersed into the aqueous raw material and pulverized to give a red coloring matter. A frozen food such as ice cream is colored red with the red coloring matter. |
