PURPOSE:To obtain a formed food useful as a material for food, having a crisp and fresh chewiness and uniform texture, excellent heat resistance, freeze resistance and drying resistance by mixing a gelatinous food with a fibrous gel of a thermally coagulable beta-1,3-glucan and forming. CONSTITUTION:This formed food is obtained by mixing 100 pts.wt. of a gelatinous food with preferably 1-80 pts.wt. of a fibrous gel (diameter and length are preferably 0.01-10mm, respectively) of a thermally coagulable beta-1, 3-glucan such as curdlan and forming. |
