PURPOSE:To obtain rice flour of low stickiness, having quality and workability comparable to those of rice flour derived from old rice, also capable of giving products with good palate feel, by treating rice of new crop with a specific gas. CONSTITUTION:Rice of new crop (or rice flour derived from rice of new crop) is treated with an ethylene-contg. gas and ground to obtain the objective rice flour. The amount of the ethylene-contg. gas to be used is suitably 1-5vol.times the rice of new crop (or above-mentioned rice flour). The treatment is conducted at 15-40 deg.C for 5hr or longer using such a gas containing 10-100vol.% of ethylene gas. |
