The invention relates to a method of treating a medium in order to inhibit the reproduction of fungi in the said medium. This method consists in mixing with the said medium a proportion by weight of between 1% and 15% glucuronoxylan, in aqueous solution if the medium does not contain water. The glucuronoxylan used may be extracted from shells of sunflower by treatment with base.
