A method of producing a simulated beef extract comprises heating a solution of substantially defatted fish solubles at 180‹-205‹F. and at a pH of 6-9 under agitation and in the presence of a reducing sugar until a beef flavour is obtained. The reducing sugar may be glucose, galactose, mannose, lactose, maltose, invert sucrose and ribose. The reducing sugar may be present as part of the fish solubles. The solution may be obtained by acidifying fish cooker juice and/or fishmeal rendering press water, heating, centrifuging to remove unwanted protein and oil and then concentrating the solution. An alkali is added to the concentrated solution before use. The extract may be mixed with monosodium glutamate, sugar and salt and spray dried to give a soup powder. |
