<p>The invention relates to suspensions or dispersions of gelled and hydrated biopolymer particles as well as to a process for obtaining such suspensions, either from dried gelling biopolymers or from dissolved gelling biopolymers. Such suspensions may be used in food products (such as edible spreads and ice-creams) or personal care products (such as skin creams and moisturizers), e.g. to impart a fatty-like character to the product.</p> |
