PURPOSE:To produce a noodle having a good quality, one of various water contents and a good taste in an extremely shortened treating time. CONSTITUTION:A device for producing a noodle is provided with a hydration device 20 for processing grain flour into a steamed powdery meat-like dough raw material, and a kneading device 50 for kneading the produced dough raw material into a noodle dough. The hydration device 20 is provided with a hydration outer cylinder 30, a hydration shaft body 40, a spiral transfer member 43 disposed on the hydration shaft body 40, pins 45, 45... planted on the outer periphery of the hydration shaft body 40 in the following hydration chamber 32, and a water-spraying hole 33. The kneading device 50 is provided with a kneading outer cylinder 60 connected to the extrusion end 36 of the hydration device 20, a kneading screw 70 produced so as to give a compression ratio of 35-85%, and a smoothly shaped extrusion opening 65 opened from the excessive space 61 formed so as not to produce an obstruction. |
