PURPOSE:To obtain a preservative for food capable of raising shelf stability of a wide range of foods, not damaging qualities of food, containing a bacteriocin produced by lactic acid bacteria belonging to the genus Propionibacterium arid a specific compound. CONSTITUTION:This preservative for food contains (A) a bacteriocin produced by lactic acid bacteria belonging to the genus Propionibacterium and (B) at least one compound selected from the group consisting of (B-1) an organic acid and its salt (acetic acid), (B-2) an aliphatic ester of a polyhydric alcohol (propylene glycol fatty acid ester), (B-3) an amino acid (glycine), (B-4) a peptide or protein having antimicrobial action (protamine), (B-5) a saccharide, a saccharic acid, an amino sugar or its partial hydrolyzate (pectin), (B-6) spice, its essential or a plant component (cinnamon) and (B-7) an alcohol (propylene glycol). |
