PURPOSE:To readily produce a allergen-reduced rice suppliable to a patient allergic to a grain, especially rice as a food by immersing rice in an alkaline aqueous solution. CONSTITUTION:Rice is immersed in an alkaline aqueous solution having >=8.5, preferably >=12pH, e.g. an aqueous solution of sodium hydroxide and stirred, as necessary. After this treatment, neutralization is preferably carried out with dilute sulfuric acid. Allergens contained in the rice can be removed or reduced. Since proteins scarcely acting as allergens are not substantially reduced, the nutritive value is not substantially reduced. |
