PURPOSE:To produce a retortable pouched rice gruel or porridge of rice and vegetables free from deformation of the rice grains or gelatinization over a long period and excellent in taste, mouth feeling and visual appearance. CONSTITUTION:This method for production of a packaged rice gruel or porridge of rice and vegetables is carried out by cooling rice grains controlled to 11 to 17wt.% water content and subjected to wet-heat treatment for 10 to 18 min under conditions of 110 to 120 deg.C and 100% relative humidity to <=40 deg.C within 20min, subsequently packaging the treated rice grains together with a thickening agent-containing water or seasoning in an airtight package, then tightly sealing it according to the heat sealing method and applying a heat sterilization thereto under pressure. |
